The Right Way to Defrost Bread Without It Getting Soggy

I ruined a lot of frozen bread before I figured this out. Microwave gave me a rubbery slice with a hot core and cold edges. Countertop in the plastic bag gave me a soggy crust and a center that tasted like damp sponge. My bread drawer became a graveyard of half-bad loaves, and I kept buying new ones anyway.

What actually works

The best way to defrost bread depends on how much time you have. Here is what I do now:

  1. Overnight in the fridge. Take out the slices you need, lay them on a plate, and let them sit in the fridge until morning. The fridge pulls moisture out slowly, so the bread keeps its texture. Toast it and it is like it was never frozen.
  2. Room temperature in a towel. If you need it in an hour, wrap the slices in a clean kitchen towel and leave them on the counter. The towel soaks up the condensation instead of letting it sit against the crust.
  3. Microwave only for emergencies. Ten to fifteen seconds per slice on low power, then straight into the toaster. It will not be perfect, but it beats a hard brick.

What to avoid

Never defrost bread in the plastic bag it came in. The trapped moisture turns the crust soft and the inside gummy. The same goes for putting a whole loaf on the counter wrapped in plastic. You end up with a loaf that looks fine on the outside and tastes like paste inside.

How I freeze bread now

I slice the loaf before freezing, so I can pull out exactly what I need. I wrap the slices in aluminum foil or a zip bag with the air pressed out. Loaves stored that way stay good for about three months, which means I stopped throwing out half-eaten bread for good.

The first time I toasted a slice that had been frozen the right way, I actually checked the loaf twice to make sure it was the same bread. That is how big the difference is.
