The Onion Cutting Hack That Actually Prevents Tears
I tried the spoon-in-mouth thing. The sunglasses. The “don’t form an emotional attachment” joke. Even lit a candle next to the cutting board like some kind of onion exorcism.
None of it worked. My eyes still burned every time I diced an onion for salsa.

The real reason onions make you cry
When you cut an onion, you rupture its cell walls. An enzyme called alliinase mixes with sulfur compounds, creates a gas called syn-propanethial-S-oxide, and that gas floats up to your eyes, dissolves in your tears, and forms a mild sulfuric acid. Your eyes water to flush it out.
A sharp knife slices cleanly through cells instead of crushing them. Fewer crushed cells = less gas released. That’s it. That’s the hack.

Four things that actually work
I tested these over a month of cooking dinner almost every night. Here’s what moved the needle:
- Sharpen your knife. This alone reduced my crying by maybe 70 percent. If you don’t own a whetstone, even a pull-through sharpener is better than a dull blade.
- Chill the onion. Pop it in the freezer for 10-15 minutes before cutting. Cold slows down the enzyme reaction. Don’t freeze it solid — just get it cold enough that the chemical reaction drags its feet.
- Cut near a vent or window. I position my cutting board next to the stove with the vent hood on low. The airflow pulls the gas away from my face. Even an open window with a slight breeze helps.
- Leave the root end for last. The root has the highest concentration of those sulfur compounds. Cut the stem end first, peel, halve, slice, and only deal with the root at the very end.
What doesn’t work
Bread in your mouth? No. Goggles? Yes technically but now you’re the person wearing goggles in your kitchen. Chewing gum? Didn’t help me. Contact lenses do help — they create a barrier — but I don’t wear them so that’s moot.
The sharp knife thing sounds too simple. I get why people skip it and go looking for weird tricks. But I’ve converted three friends now just by sharpening their knives. One of them texted me “I made French onion soup without crying” and I felt like I’d accomplished something real in this world.
