How to Ripen Avocados in 24 Hours
Saturday afternoon: I want guacamole. The grocery store has exactly two avocados left and they are both hard as rocks. Green, solid, and at least three days from being edible. I buy them anyway because I am stubborn.
Sunday afternoon: perfect avocados. Slightly soft to the touch, creamy inside, no brown spots. Here is exactly how I did it.
The Brown Bag Method (The Gold Standard)
Put the avocados in a brown paper bag with a banana or an apple. Roll the top of the bag closed — do not seal it tightly, just fold it over. Leave it on the counter at room temperature.

Bananas and apples release ethylene gas, a natural plant hormone that triggers ripening. The paper bag traps the gas around the avocados, speeding up the process dramatically. Without the bag, the gas just floats away.
This turns a 3-4 day wait into 24 hours or less. Check at the 18-hour mark — sometimes they ripen faster than expected.
What Does Not Work (I Tried These)
- Oven: Some people say 200°F for 10 minutes. It softens the avocado but does not ripen it — the flavor stays unripe and the texture gets weird. Do not do this.
- Microwave: Poke with a fork, microwave 30 seconds. Same problem as the oven — soft but flavorless. This is not ripening, it is cooking.
- Rice bin: Burying in rice. Theoretically traps ethylene but is way less effective than a paper bag. I tried it. Waited two days. Avocado was still hard.
How to Tell When It Is Ready
Do not squeeze the whole avocado — you will bruise it. Press gently near the stem end with your thumb. It should give slightly, like pressing the pad of your palm. If it is mushy, it is overripe. If it does not give at all, it needs more time.
Also check under the little stem cap. Pop it off with your fingernail. Green underneath = ready. Brown underneath = overripe. If the cap does not come off easily, it is not ripe yet.
Storage Once Ripe
A ripe avocado lasts about 2 days on the counter or up to 5 days in the fridge. The cold slows ripening to a crawl. If you have ripe avocados but are not ready to use them, move them to the fridge immediately.
