Why Your Pancakes Are Flat and How to Fix the Batter

My kids call them frisbees. Every Sunday I would pour batter, watch it spread thin, and flip sad little discs that looked nothing like the pictures. I blamed the pan for months. Then I figured out the batter was the problem all along.

Flat pancakes usually come from one of three mistakes, and they are all easy to fix.

Stop Overmixing

Overmixing is the number one killer of fluffy pancakes. When you stir until the batter is perfectly smooth, you develop gluten, and gluten makes pancakes tough and flat. Stir until you see a few lumps and then stop. Lumps are your friend here.

Check Your Leavening

Old baking powder does nothing. It loses its lift after about six months, and no amount of stirring brings it back. Test it: drop a spoonful into warm water. If it fizzes hard, it is alive. If it just sits there, buy a new can.

Also check the ratio. Most recipes want about two teaspoons of baking powder per cup of flour. If you halved a recipe and forgot to halve the leavening, you get a different problem: batter that foams up and then collapses.

Let the Batter Rest

Mix the batter and let it sit for five to ten minutes before you pour. The flour absorbs the liquid, the bubbles form, and the first pancake finally looks like a pancake. That first one is always the test pancake anyway.

Heat Matters Too

Medium heat, not high. High heat browns the outside before the middle cooks through, so you flip a pancake that is dark on both sides and raw in the middle. It also makes the butter burn, which affects the rise.

Pour smaller rounds. Batter spreads as it cooks, so a cup of batter turns into a dinner plate if you are not careful. A quarter cup per pancake is plenty.
