The Right Way to Store Mushrooms So They Last Two Weeks
I went through four different mushroom storage methods before I found one that works. Plastic bag, slimy in three days. Paper bag, dried out in five. A sealed container with paper towels, mold by the end of the week. Every single time I ended up throwing half the pack away. Then I read about the paper towel open bag method from a mushroom farmer, and it changed my grocery routine.
Why Mushrooms Go Bad Fast
Mushrooms are about 90 percent water and they breathe. They release moisture as they sit, and if that moisture has nowhere to go, it pools on the surface and turns to slime. A sealed plastic bag is basically a humidity chamber for rot.
The Method That Works
- Take the mushrooms out of the plastic clamshell or bag when you get home.
- Lay them in a single layer on a dry paper towel, inside an open paper bag.
- Fold the top of the bag over loosely. Do not seal it.
- Put the bag on a fridge shelf, not in the crisper drawer. The drawer traps more moisture.
- Replace the paper towel after three days if it feels damp.
What This Actually Does
The paper towel catches the moisture the mushrooms release, and the open bag lets air move. Mushrooms stay firm and dry for up to two weeks. I buy the big packs now instead of the tiny ones, because I know they will last.
Things I Got Wrong
Do not wash mushrooms before storing. Rinsing adds water to the surface, and that water is what starts the slime. Brush off dirt with a dry cloth instead, and wash them right before you cook.
Do not stack them deep. If you pile mushrooms two inches high, the ones on the bottom get crushed and bruised, and bruised mushrooms rot fast.
When They Are Past Saving
If a mushroom is slimy or smells sour, throw it out. But if it is just a little dry or wrinkly, it is still fine for soups, sauces, and stir-fries. Dried-out mushrooms rehydrate beautifully in broth.

That is my whole system now. Open paper bag, dry towel, fridge shelf. I have not thrown out a mushroom in months.
