Revive Day-Old Rice So It Tastes Fresh Again

My wife used to throw out leftover rice. Every time. “It is dry and hard,” she would say. Then I showed her the wet paper towel trick. Now we save about $15 a month just on rice.

Why Leftover Rice Gets Hard

Rice loses moisture in the fridge. The starch molecules rearrange — a process called retrogradation — and that is why day-old rice feels like eating tiny pebbles. But the moisture is not gone forever. It just needs help coming back.

The Wet Paper Towel Method (Works Every Time)

  1. Put your cold rice in a microwave-safe bowl
  2. Drape a damp paper towel over the top — not soaking, just wet
  3. Cover loosely with a plate or microwave lid
  4. Microwave for 60-90 seconds
  5. Let it sit covered for 30 seconds after the beep

The steam from the wet towel rehydrates every grain. It comes out fluffy. My wife now does this herself and has not thrown out rice in months.

Other Methods That Also Work

  • Stovetop: Add a tablespoon of water per cup of rice. Cover and heat on low for 5 minutes. Fluff with a fork.
  • Steamer basket: If you have one, 3 minutes over simmering water. Best texture of all three methods.

What NOT to Do

Do not microwave rice uncovered. It turns into gravel. Do not add too much water — you get mush. And for the love of everything, do not reheat rice more than once. Rice can harbor bacteria that survive one reheat but not two.

📋 Quick Summary: Damp paper towel over cold rice, microwave 90 seconds, let rest 30 seconds. Never reheat rice twice. The stovetop + tablespoon of water method gives the fluffiest results.
