Mushrooms are basically little sponges. They’re 92% water and they breathe. When you trap them in a sealed plastic container, the moisture has nowhere to go. Condensation builds up. Bacteria loves that.

The plastic wrap that mushrooms come in at the store? That’s a humidity trap. It’s designed for display, not storage. Take them out the moment you get home.

The Paper Bag Method

Here is the entire solution: transfer mushrooms to a brown paper bag. Roll the top loosely. Put it in the fridge. That’s it.

Paper lets the mushrooms breathe while absorbing excess moisture. The bag stays dry on the inside. No condensation. No slime.

I started doing this six months ago. I now get 7-10 days out of a bag of mushrooms instead of the 3-4 I was getting before.

Things I Got Wrong the First Time

Do not wash mushrooms before storing them. Water accelerates spoilage. Only clean them right before cooking.

Do not cram three pounds of mushrooms into one tiny bag. They need some air circulation. One layer is ideal, two layers max.

Do not put the paper bag in the crisper drawer if it’s packed tight. The lack of airflow defeats the purpose. I keep mine on a regular shelf.

When the Paper Bag Isn’t Enough

If you can already see dark spots, use those mushrooms today. Paper can slow spoilage but it cannot reverse it. Cook them up in a quick stir-fry, soup, or omelette.

For bulk purchases from warehouse stores, split mushrooms into multiple small paper bags. One big bag crammed full will still trap moisture in the middle.
