Keep Brown Sugar Soft Forever With This One Thing

You know that moment when you reach for brown sugar and it has turned into a brick? You stab at it with a fork. Nothing. You try a spoon. The spoon bends. It is less sugar and more sedimentary rock.

I used to just buy a new bag. I am not proud of this.

Why It Turns Hard

Brown sugar is white sugar with molasses added back in. When the moisture in that molasses evaporates, the sugar crystals fuse together. Airtight storage prevents this entirely — but most brown sugar packaging is not actually airtight once opened.

The Marshmallow Trick

Drop a large marshmallow into your brown sugar container. That is it. One marshmallow. The moisture from the marshmallow slowly releases into the sugar, keeping it soft. Replace the marshmallow when it turns hard and crusty — usually every 2-3 weeks.

This works because marshmallows are mostly sugar and water with gelatin holding them together. They are the perfect slow-release humidity pack. A slice of bread also works but molds faster.

If It Is Already Hard

Put the hardened sugar in a bowl, cover it with a damp paper towel, and microwave for 20 seconds. Break it up with a fork. Repeat in 10-second bursts if needed. Use it immediately — it will re-harden as it cools.

For a permanent fix, place the sugar in a sealed container with a slice of apple overnight. The apple gives up its moisture to the sugar. In the morning the sugar is soft and the apple slice is shriveled.

The Container Matters

Transfer brown sugar to a glass jar with a rubber gasket seal as soon as you open the bag. The original plastic bag is not your friend. Even a good Tupperware-style container with a snap lid beats the bag.
