I once found a package in my freezer that had been in there so long it had freezer burn on top of freezer burn. No label. No idea what it was. I threw it out without ever learning its name. That was the night I built a system, and I have not played freezer roulette since.

Why freezers turn into black holes

Frozen food hides itself. You shove a bag of chicken in behind the ice cream, close the door, and six weeks later you are convinced the freezer ate it. The food is not gone. It is just anonymous. Every unlabeled package is a future mystery, and mysteries are how leftovers die.

The three rules I stole from a prep cook

A buddy who worked the line at a diner showed me how they run a commercial freezer. His rules translated straight to my home kitchen:

• Everything gets a label before it goes in. Item, date, and what it is for.
• Raw meat lives on the bottom shelf so nothing drips onto ready-to-eat food.
• New stuff goes to the back, old stuff moves to the front. First in, first out.

Make it stupidly easy to keep up

The system only works if it takes ten seconds. I keep a roll of painter’s tape and a Sharpie on top of the freezer. Grab, write, stick, done. No hunting for a marker in the junk drawer while the chicken thaws on the counter.

I also stopped buying those giant unlabeled bags of whatever was on sale. Now I portion meat into labeled freezer bags the day I bring it home. It takes one extra step that saves me from defrosting a brick meant for eight people when I only need two servings.

Do a monthly ten-minute sweep

Once a month I pull everything out, wipe the shelves, and check dates. Anything past three months gets moved to the front so I actually use it. Anything I cannot identify gets composted or tossed. My freezer is still full most of the time, but now it is full of food I recognize.
