How to Keep Guacamole Green for Days Without Plastic Wrap
The first time I made guacamole for a party, I prepped it three hours early. By the time guests arrived, it looked like something you would scrape off a sidewalk. Brown. Unappetizing. I served it anyway and watched people politely avoid it.
Avocados turn brown because of an enzyme called polyphenol oxidase. It reacts with oxygen in the air and turns the surface dark. The trick is blocking the oxygen. Here is how, without wasting a foot of plastic wrap.

The Water Method (Yes, Really)
Smooth the guacamole flat in your container. Pour a thin layer of cold water over the top — just enough to cover the surface completely. Seal the container and refrigerate.
When you are ready to serve, pour off the water and stir. The guacamole underneath will be bright green. The water acts as an oxygen barrier, same as plastic wrap, but without the waste.
I know pouring water on guacamole sounds wrong. I felt the same way. But it does not dilute the guac — avocados are so fatty that the water just sits on top and slides right off.
Lime Juice Alone Is Not Enough
People say “just add more lime juice.” The acid does slow browning, but it does not stop it. After a few hours the surface still darkens. Use lime juice for flavor, not as your only preservation method.
The Onion Trick for Short-Term Storage
If you are only storing guacamole for a few hours, press a halved red onion into the surface. The sulfur compounds that make you cry when you chop onions also inhibit the browning enzyme. Cover the container and refrigerate. Remove the onion before serving — or leave it, if your guests like raw onion.
How Long Does This Actually Last?
With the water method, I have kept guacamole green for three days. By day four the texture starts to suffer — the avocado breaks down and gets watery. If you need to store it longer than that, you are better off freezing avocado halves whole and making fresh guac when you need it.
