How to Rescue Oversalted Soup Without Adding More Water

I ruined a pot of chicken soup last winter. Got distracted, salted it twice — once during the saute and again after adding the broth. One taste and my mouth puckered. A whole Sunday afternoon of simmering, three pounds of chicken thighs, and a carton of good stock — wrecked by an extra teaspoon of salt.

You cannot unsalt soup. Salt dissolves and integrates into the liquid at a molecular level. But you can dilute the effect in ways that do not just mean adding water and hoping for the best.

The Potato Myth

Everyone says to throw a raw potato in the pot and it will absorb the salt. This does not work. I tested it. The potato absorbed some liquid — maybe 5% of the total — which technically reduced the salt by 5%, which is not enough to taste. The potato does not selectively absorb sodium. It absorbs broth. It is just dilution in a different shape.

What Actually Works

  1. Add more of everything except salt. More unsalted broth, more vegetables, more meat. This is dilution but targeted — you are adding flavor along with volume.
  2. Add acid. Lemon juice, vinegar, or a splash of white wine. Acid does not remove salt but it distracts your tongue from it. Salt and acid balance each other perceptually. Start with a teaspoon, stir, taste. Repeat until the saltiness recedes.
  3. Add dairy. Cream, coconut milk, sour cream, or yogurt mellow salt and add richness. A splash of heavy cream in an oversalted chicken soup turns it into a cream of chicken soup — different dish, but not a ruined one.
  4. Add a starch. Cooked rice, pasta, or a peeled quartered potato that you actually plan to eat. The starch absorbs salted liquid and gives the salt somewhere to go.
  5. Double the batch. If you have the ingredients, make a second unsalted batch and combine them. Now you have a lot of soup. Freeze half for later.

I used the acid + dairy approach on my ruined chicken soup — lemon juice and a splash of heavy cream. It went from “make a face and dump it” to “this is actually good.” Not the soup I intended. But a good soup.
