How to Make Tortillas From Scratch Without a Tortilla Press

The Dough Is the Whole Game
Mix two cups of flour, half a teaspoon of salt, and a third cup of oil. Add about three quarters of a cup of warm water and mix until it comes together. The dough should be soft but not sticky.

Rolling Without a Press
Divide the dough into eight balls. Keep the balls you are not using covered with a damp towel so they do not dry out.
Flatten one ball with your palm, then roll from the center outward, turning the dough a quarter turn after every couple of rolls. Aim for even thickness, about as thin as a coin. Do not obsess over perfect circles, nobody checks.
Cook Them Hot and Fast
Heat a dry skillet over medium-high heat. No oil. Lay the tortilla in and let it cook until it puffs and gets brown spots, about thirty seconds per side.
Keep cooked tortillas stacked under a clean towel. They stay warm and steamy while you roll the next one. I usually double the batch and freeze the extras.
