Defrost Meat Safely and Quickly with a Cast Iron Pan

Why a cast iron pan thaws meat fast

Cast iron conducts heat extremely well. Set a frozen steak or chicken breast flat on a room-temperature cast iron pan, and the pan pulls warmth from the air and pushes it into the meat. It works like a heat sink in reverse.

This is the same reason a cast iron pan holds heat when you sear. That same property, pointed at frozen food, thaws it noticeably faster than just leaving it on a plate.

How to do it right

Any heavy metal pan works. An aluminum baking sheet is the classic version of this trick. The point is a thick, conductive metal surface, not the specific material.
