Why You Should Freeze Ginger Instead of Refrigerating It
I found a piece of ginger in the back of my fridge last month that looked like a shriveled alien finger. Wrinkled. Dried out. Completely unusable. I bought it two weeks earlier for a stir fry I never made.
That was the third time this year. At $4 a pound for organic ginger, I was basically throwing money in the trash.

What happens to ginger in the fridge
Ginger is a root. It wants humidity, not cold. Your fridge is cold and dry. The cold slows decay — that part’s fine. But the dry air pulls moisture out through the skin. After a week, it’s wrinkly. After two, it’s a paperweight.
The freezer fixes this. Ginger doesn’t freeze solid — it stays workable, kind of like frozen butter. The cold stops decay. The sealed bag traps moisture. Win-win.
How I store it now
I buy a big piece of ginger — about the size of my palm. I don’t peel it. I don’t cut it. I put the whole thing in a zip-top bag, squeeze the air out, and toss it in the freezer door.
When I need ginger, I pull it out and grate what I need. Frozen ginger grates easier than fresh. It doesn’t get those stringy bits that clog a microplane. It comes off almost powdery.
The peeling trick nobody told me
Don’t peel ginger with a vegetable peeler. You lose half the ginger that way. Use a spoon. The edge of a teaspoon scrapes the skin off without digging into the flesh. It works even better on frozen ginger. The skin separates cleanly.

Ginger peels make great tea. Throw them in a mug with hot water and honey. Tastes like the tea they serve at the end of a sushi dinner. I keep a separate bag of peels in the freezer for exactly this.
