Why Bread Molds So Fast in Your Kitchen

Most of us keep bread on the counter in the plastic bag it came in. That bag traps humidity from the bread itself. Within 3-4 days in summer, you have green spots.

The Hack That Changed My Bread Game

Paper bag. That is it. Well, almost.

Transfer your bread from the plastic bag into a paper bag. Fold the top closed with a clothespin. The paper wicks moisture away from the crust instead of trapping it. Bread stays crusty on the outside, soft inside, and mold-free for a full week — even in July.

My aunt’s twist: wrap half the loaf in a clean kitchen towel first, then into the paper bag. The towel absorbs excess moisture without drying the bread into a brick. I tried it with a sourdough boule and it lasted eight days before I finished it. No mold.

What About Freezing?

Freezing is the nuclear option. Slice the bread first — you can pull out exactly what you need and toast it straight from frozen. Do not freeze whole loaves unless you plan to eat the entire thing within a day of thawing. Thawed whole bread gets gummy.

I keep a freezer bag with half-slices for toast emergencies. It has saved more weekday breakfasts than I can count.

Things I Got Wrong

I once put a still-warm loaf into a paper bag and sealed it tight. Condensation city. Mold in two days. Bread must be completely cool before any storage — paper or otherwise.

I also tried the “bread box” thing. Unless you have a ceramic one with ventilation holes, it is just a dark plastic box where humidity parties.
